What is your claim to fame?
Recently, I was inducted into the Share Our Strength Leadership Council, a non-profit organization whose mission to end childhood hunger in the United States.

I am also on the board of directors of American Farmland Trust, an association dedicated to preserving and protecting the nation's agricultural resources.

 

What makes you original and unique?
I am an avid supporter of ‘The Cow That Saved America,' the Randall Lineback. I buy from Chapel Hill Farm of Berryville, VA in order to sustain our country's most rare breed of cattle. Randall beef was on America's table before feedlots, antibiotics, and growth hormones.   We must preserve, protect and promote this unique American breed, which is threatened with extinction.


Additionally, Restaurant Eve's "wormery," as it is fondly known is another unique element to Restaurant Eve.  With the help of 2,000 squiggly friends and a device that feeds the worms the restaurant's organic trash, a waste product is created that I use to generate fertilizer. I then use this fertilizer in the restaurant's personal garden, the use the produce as the optimal fresh ingredients to grace Restaurant Eve's menu.

 

Who or what inspired you to come to Alexandria?
My wife is from Old Town, and we've lived in Alexandria for years.

Our concept seemed natural here in Alexandria. Virginia is a state where producers and farmers are plentiful and where the lifestyle of shopping for food was similar to my Irish roots.

 

What is your secret to success?
My secret to success is to constantly reinvent oneself; pushing boundaries and challenging the status quo. And I always listen to my wife!

 

What is your proudest achievement?
My proudest achievement is being able to honor both of my children as namesakes to both Restaurant Eve and Eamonn's A Dublin Chipper.

A La Lucia is a favorite for my wife and I.

 

Favorite places to go for brunch, happy hour, dinner under the stars, lunch deals, and places to take your dog?
Happy Hour: Any of the Irish bars in Old Town.

Lunch Deals: The Majestic's Royal Pick is a great lunch deal- sitting at the bar for a quick meal on the go. Guests can choose any two items for only $12.

 

If you had friends visiting Alexandria what would you tell them to do and see during their visit?
Make sure to take in all of this area's history. Check out the Carlyle Museum and grab homemade ice cream along King Street.
